So simple to make, healthy and so very tasty, so much so it warms the soul.
Ingredients
750gr carrots (peeled or washed and chopped)
1 small sweet potato (peeled and chopped)
1 onion (peeled and chopped)
1 clove garlic (peeled and chopped)
1/2 ” ginger (peeled and chopped)
1 1/2 tsp ground coriander
1 Tbsp coconut oil
Seasoning
Method
In a large pan, melt the coconut oil and over a low heat saute the onion, garlic and ginger for 5 mins, add the ground coriander and saute for another 1-2 mins.
Add all the remaining ingredients and then top up with water or stock until its 1″ above the vegetables.
Simmer for 30 mins until all the vegetables are cooked.
Process and season.
Serve topped with chopped coriander.
