
1 cup Buckwheat Flour
1.25 cups Coconut Milk
2 Tbsp Maple Syrup (optional)
1 Tsp Baking Powder
1/4 Tsp Baking Soda
Mix everything together until smooth.
Use a little spray oil on hotplate or pan
Drop about 2 Tbsp of batter onto hotplate or pan to make small American type pancakes
Top with fruit such as berries, bananas, apples (fresh or stewed. A drizzle of maple syrup too if you have a sweet toothlike me or some dairy free yogurt.
